  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 cup (100g) brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 cup (60g) Greek yogurt or sour cream (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray and line with parchment paper if desired.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth with some small lumps remaining.
  3. Add the melted butter to the bananas and stir to combine.
  4. Whisk in the brown sugar, granulated sugar, eggs, vanilla extract, and Greek yogurt or sour cream if using until smooth and creamy.
  5. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula, mixing just until combined to avoid overmixing.
  7. Fold in the chopped nuts if using.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 55-65 minutes, starting to check at 55 minutes by inserting a toothpick into the center. It should come out clean or with a few moist crumbs.
  10. If the top browns too quickly, tent with foil for the last 10-15 minutes of baking.
  11. Remove from oven and let cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overmix the batter to keep the bread tender. Use ripe bananas with spots or brown for best flavor and moisture. You can roast bananas at 300°F for 15 minutes if they are underripe. Line the pan with parchment paper for easy removal. Start checking the bread at 55 minutes to avoid overbaking. Variations include adding chocolate chips, dried fruit, or nutmeg. For dairy-free, substitute butter with coconut oil and yogurt with a dairy-free alternative.
