  • 1 cup crushed pineapple, drained
  • 2 cups all-purpose flour (240g)
  • 1 ½ cups granulated sugar (300g)
  • 1 teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ cup vegetable oil (120ml)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
  2. In a large bowl, mash bananas until smooth but slightly chunky. Add drained pineapple, vegetable oil, eggs, and vanilla extract. Beat until combined and slightly frothy, about 2-3 minutes.
  3. In a separate bowl, sift together flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  4. Slowly add dry ingredients to wet ingredients, folding gently with a spatula or mixer on low speed. Mix just until combined to avoid overmixing.
  5. Fold in chopped nuts if using.
  6. Pour batter into prepared pan, filling about ¾ full. Smooth the top.
  7. Bake for 55-65 minutes, checking at 50 minutes with a toothpick. Bread is done when toothpick comes out clean or with a few moist crumbs.
  8. Cool completely on a wire rack before slicing.

Notes

Use ripe bananas with black spots for best sweetness and moisture. Drain pineapple well to avoid sogginess. Do not overmix batter to keep bread tender. Tent with foil if browning too fast. For gluten-free, substitute all-purpose flour with gluten-free baking flour blend. For vegan, replace eggs with flax eggs and vegetable oil with coconut oil.
