Quick and easy no bake cinnamon roll cookies with just five ingredients, delivering the warm, cinnamon-spiced flavor of classic cinnamon rolls without any baking.

  • 1 ½ cups (135g) rolled oats (old-fashioned)
  • ½ cup (45g) unsweetened shredded coconut
  • ¼ cup (60ml) coconut oil, melted (can substitute unsalted butter)
  • ¼ cup (60ml) maple syrup
  • 2 teaspoons ground cinnamon
  • Pinch of salt (optional)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Measure 1 ½ cups (135g) rolled oats and ½ cup (45g) unsweetened shredded coconut into a mixing bowl.
  2. Add 2 teaspoons ground cinnamon and a pinch of salt. Stir to distribute evenly.
  3. In a small bowl, combine ¼ cup (60ml) melted coconut oil with ¼ cup (60ml) maple syrup. Optionally add 1 teaspoon vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir thoroughly until the mixture is sticky and well coated.
  5. Scoop tablespoon-sized portions, roll into balls, then flatten into cookie shapes. Place on a parchment-lined cookie sheet or plate about 1 inch apart.
  6. Chill in the refrigerator for at least 30 minutes to set and firm up.
  7. Enjoy immediately or store in an airtight container in the fridge for up to one week, or freeze for up to three months.

Notes

Use old-fashioned rolled oats for best texture. Melt coconut oil gently to avoid cooking the syrup. Chilling is essential to firm the cookies. Adjust sweetness by reducing maple syrup and adding more cinnamon if desired. Store cookies in the fridge to prevent them from becoming soft and messy.
