  • 1/2 cup (120 ml) tomato sauce or pizza sauce
  • 1 cup (100 g) shredded mozzarella cheese
  • 2025 slices pepperoni (optional)
  • 2 tablespoons (10 g) grated Parmesan cheese
  • 1 teaspoon Italian seasoning (oregano, basil, thyme mix)
  • 1 egg, beaten (for egg wash)
  • Fresh basil leaves (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and position the rack in the middle.
  2. Thaw puff pastry sheets according to package instructions (about 30 minutes at room temperature). On a lightly floured surface, gently roll out each sheet to smooth any creases (about 12×12 inches).
  3. Cut each sheet into 16 squares, roughly 3×3 inches.
  4. Place pastry squares on a parchment-lined baking sheet, leaving space between each.
  5. Spread about 1 teaspoon of tomato sauce on each square, leaving a small border around edges.
  6. Sprinkle shredded mozzarella cheese over the sauce on each square.
  7. Add 1-2 slices of pepperoni on top (if using), then sprinkle grated Parmesan and Italian seasoning.
  8. Lightly brush the edges of each square with beaten egg using a pastry brush.
  9. Bake for 15-18 minutes until pastry is puffed and golden brown and cheese is bubbling.
  10. Remove from oven and let cool for 5 minutes on the baking sheet.
  11. Garnish with fresh basil leaves if desired and serve warm.

Notes

Keep puff pastry cold while assembling to maintain flakiness. Do not overload with sauce or cheese to avoid soggy pastry. Use freshly shredded cheese for best melting. Egg wash gives a golden, crisp finish. Refrigerate assembled bites if pastry softens before baking. Reheat leftovers in oven at 350°F for 8-10 minutes; avoid microwaving.
