  • ½ cup (100 grams) granulated sugar
  • 2 cups (480 ml) whole milk
  • ½ cup (120 ml) heavy cream
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • Optional: ground nutmeg or cinnamon (a light sprinkle)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium saucepan, combine 2 cups whole milk and ½ cup heavy cream. Warm over medium heat until just steaming, do not boil.
  3. In a mixing bowl, whisk 4 large eggs with ½ cup granulated sugar and a pinch of salt until smooth and slightly pale.
  4. Slowly pour about 1 cup of the hot milk mixture into the eggs while whisking continuously to temper the eggs.
  5. Pour the tempered egg mixture back into the saucepan with the remaining milk and cream. Stir gently over low heat for 1-2 minutes without boiling.
  6. Strain the custard mixture through a fine mesh strainer into a clean bowl or directly into your baking dish.
  7. Stir in 1 teaspoon pure vanilla extract.
  8. Place your baking dish or ramekins inside a larger roasting pan. Pour hot water into the roasting pan until it reaches halfway up the sides of the custard container.
  9. Bake in the preheated oven for 35-40 minutes until the custard is just set but still slightly wobbly in the center.
  10. Remove from the water bath and let cool to room temperature, then refrigerate for at least 2 hours before serving.

Notes

Bake custard in a water bath at low temperature to prevent curdling. Temper eggs slowly by adding hot milk gradually. Strain custard mixture for extra smoothness. Let custard chill for at least 2 hours before serving. Tent with foil if browning too quickly. Can add a light sprinkle of nutmeg or cinnamon before serving.
