  • Bone-in fully cooked ham (about 5-7 lbs), spiral-sliced preferred
  • 1 cup packed light brown sugar
  • 1 can crushed pineapple, drained
  • 1 can pineapple slices, drained
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon ground cloves (optional)
  • 1/4 teaspoon ground cinnamon
  • About 12 whole cloves
  • 1/2 cup water or apple juice

Instructions

  1. Remove the ham from packaging and pat dry with paper towels. Score the fat layer lightly in a diamond pattern if thick.
  2. Insert whole cloves into the intersections of the scored fat.
  3. In a mixing bowl, combine brown sugar, crushed pineapple, Dijon mustard, apple cider vinegar, ground cloves, and cinnamon. Stir until smooth and sticky.
  4. Pour water or apple juice into the bottom of the slow cooker. Place the ham inside, flat side down.
  5. Brush or spoon the glaze generously over the ham, making sure to get between spiral slices. Arrange pineapple slices on top, securing with toothpicks if needed.
  6. Cover and cook on low for 4 to 6 hours. Check after 3 hours to baste with additional glaze if desired. Cook until internal temperature reaches 140°F (60°C).
  7. Carefully transfer the ham to a serving platter. Spoon leftover glaze over the ham. Let rest for 10 minutes before slicing.

Notes

If glaze thickens or burns near the end, add a splash of water and stir gently. Avoid opening the slow cooker lid too often to keep moisture. Use a meat thermometer to avoid overcooking. Rinsing the ham before cooking can reduce sodium. Variations include adding chili powder for spice or using maple syrup for paleo-friendly version.
