  • 1 quart (946 ml) lime sherbet
  • 4 cups (960 ml) lemon-lime soda (e.g., Sprite or 7UP)
  • 1 to 1 ½ cups (240 to 360 ml) vodka or light rum (optional)
  • 23 drops green food coloring
  • 2 tablespoons (30 ml) fresh lime juice
  • Fresh mint leaves for garnish
  • Ice cubes as needed

Instructions

  1. Soften the lime sherbet by taking it out of the freezer about 10 minutes before mixing.
  2. In a large punch bowl or pitcher, add the softened lime sherbet and fresh lime juice. Stir gently until smooth and creamy.
  3. Slowly pour in the lemon-lime soda and stir gently to combine without flattening the fizz.
  4. Add vodka or light rum if using, and stir lightly to mix.
  5. Add 2-3 drops of green food coloring and stir carefully to achieve a shamrock green color without turning it neon.
  6. Add ice cubes to the punch bowl or directly to glasses when serving.
  7. Garnish each drink with a sprig of fresh mint.

Notes

Do not over-stir after adding soda to keep the bubbles alive. For a non-alcoholic version, omit vodka or rum and add extra lemon-lime soda or sparkling water. Use dairy-free sorbet for a dairy-free option. Prepare fresh for best texture and fizz; if refrigerated, stir well before serving and add soda to revive fizz.
