This slow cooker beef brisket recipe delivers tender, smoky, and flavorful meat with minimal effort. Perfect for cozy family dinners or casual get-togethers, it combines simple ingredients and hands-off cooking for a comforting meal.

Ingredients

Scale
  • 3 to 4 pounds beef brisket, preferably flat cut
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon ground black pepper
  • 1½ teaspoons salt (kosher or sea salt preferred)
  • 1 cup beef broth (240 ml)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil (optional, for searing)

Instructions

  1. Mix the spice rub: In a small bowl, combine smoked paprika, garlic powder, onion powder, brown sugar, chili powder, black pepper, and salt. Stir until evenly blended.
  2. Prepare the brisket: Pat the beef brisket dry with paper towels. Rub the spice mixture all over the brisket, covering every surface. Let it rest for 15 minutes at room temperature.
  3. Optional searing: Heat olive oil in a large skillet over medium-high heat. Sear the brisket for 3-4 minutes on each side until browned. This step is recommended but can be skipped.
  4. Place the brisket in the slow cooker insert, fat side up.
  5. Add liquids: Pour beef broth, Worcestershire sauce, and apple cider vinegar around the brisket, avoiding washing off the rub.
  6. Cook on LOW for 8 to 10 hours or on HIGH for 5 to 6 hours until the brisket is fork-tender.
  7. Remove the brisket and let it rest tented with foil for 15 minutes to redistribute juices.
  8. Slice the brisket thinly against the grain and serve with your favorite sides.

Notes

Searing the brisket before slow cooking adds caramelized flavor and improves texture but is optional. Use a meat thermometer aiming for 195°F (90°C) for best tenderness. Rest the meat for 15 minutes before slicing to keep it juicy. Save cooking juices for gravy or drizzling. For gluten-free, ensure Worcestershire sauce is gluten-free or substitute with coconut aminos.
