  • 2 pounds beef chuck roast or stew meat, cut into bite-sized cubes
  • 4 tablespoons unsalted butter
  • 46 fresh garlic cloves, minced
  • 1 cup beef broth (low-sodium preferred)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Trim any excess fat from the beef and cut into 1 to 1.5-inch cubes.
  2. Peel and finely mince 4 to 6 garlic cloves.
  3. Optional: Heat 1 tablespoon butter or oil in a skillet over medium-high heat and quickly brown the beef cubes on all sides, about 2-3 minutes per batch.
  4. Place beef cubes into the slow cooker.
  5. Add minced garlic, 4 tablespoons unsalted butter cut into small pieces, 1 cup beef broth, 2 tablespoons Worcestershire sauce, 1 teaspoon onion powder, 1 teaspoon smoked paprika (if using), salt, and pepper.
  6. Stir gently to distribute garlic and spices without breaking up the beef cubes.
  7. Cover and cook on low for 6 to 8 hours until beef is fork-tender.
  8. Check tenderness after 6 hours and continue cooking if needed, checking every 30 minutes.
  9. Once done, stir gently to coat beef bites in the garlic butter sauce.
  10. Sprinkle chopped fresh parsley on top.
  11. Serve warm over mashed potatoes, rice, or buttered noodles.

Notes

Searing the beef before slow cooking is optional but adds extra flavor. Avoid lifting the slow cooker lid during cooking to maintain heat. Use fresh garlic for best flavor. Adjust seasoning after cooking. If sauce is too thin, thicken with a cornstarch slurry and cook on high for 15 minutes.
