  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and black pepper, to taste
  • 1/4 cup apple cider vinegar
  • 1/2 cup chicken or vegetable broth
  • Optional: 1/2 cup barbecue sauce

Instructions

  1. Trim any excess fat from the pork shoulder, leaving a thin layer for flavor and moisture. Pat dry with paper towels.
  2. In a small bowl, combine brown sugar, smoked paprika, chili powder, cumin, salt, and pepper. Stir well.
  3. Rub the spice mix all over the pork shoulder, pressing it in evenly.
  4. Place sliced onion and minced garlic at the bottom of the slow cooker.
  5. Place the seasoned pork shoulder on top of the onions and garlic.
  6. Pour apple cider vinegar and chicken broth around the pork, avoiding washing off the rub.
  7. Cover and cook on low for 8 to 10 hours, or until pork is fall-apart tender.
  8. Remove pork and shred with two forks or tongs into bite-sized pieces.
  9. Skim excess fat from slow cooker juices, then return shredded pork to soak in juices for 10-15 minutes.
  10. Toss with barbecue sauce if desired and serve on buns, tortillas, or with side dishes.
