Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, finely chopped onion, minced garlic, egg, Worcestershire sauce, salt, and pepper. Mix gently until just combined.
  2. Shape the mixture into roughly 1.5-inch meatballs, about 20 meatballs total.
  3. Heat butter in a skillet over medium heat. Add finely chopped mushrooms and chopped onion. Cook until mushrooms release moisture and onions turn translucent, about 7-8 minutes.
  4. Sprinkle flour over the mushroom mixture and stir to coat. Slowly pour in beef broth while stirring to avoid lumps.
  5. Add ketchup and Dijon mustard. Let the sauce simmer gently until thickened, about 2-3 minutes. Season with salt and pepper to taste.
  6. Place meatballs in the slow cooker in a single layer if possible. Pour mushroom gravy evenly over the meatballs.
  7. Cover and cook on low for 4 to 5 hours until meatballs are tender and fully cooked.
  8. Before serving, gently stir meatballs to coat with sauce. If gravy is too thick, stir in a splash of beef broth or water to loosen.
