  • 1.5 to 2 pounds sirloin or chuck steak, cut into 1 ½-inch cubes
  • 4 medium Yukon Gold potatoes, peeled and quartered
  • 1 large yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 ½ cups beef broth (low-sodium preferred)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Prep the ingredients: cut steak into 1 ½-inch cubes, peel and quarter potatoes, slice onion, and mince garlic.
  2. Heat olive oil in a skillet over medium-high heat. Brown steak cubes on all sides in batches, then transfer to slow cooker.
  3. Layer potatoes and sliced onion on top of steak in slow cooker. Sprinkle minced garlic evenly over everything.
  4. Pour in beef broth and Worcestershire sauce. Sprinkle thyme, smoked paprika, salt, and pepper. Stir gently to combine.
  5. Cover and cook on low for 4 to 5 hours until steak is fork-tender and potatoes are soft but not mushy. Alternatively, cook on high for 2.5 to 3 hours, watching carefully.
  6. Taste and adjust seasoning with salt and pepper if needed.
  7. Garnish with chopped fresh parsley and serve hot with crusty bread or a green salad.

Notes

Brown the steak before slow cooking to seal in juices and add flavor. Use Yukon Gold potatoes to hold shape better. For thicker sauce, add a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water about 30 minutes before end of cooking. Avoid lifting the slow cooker lid during cooking to maintain temperature. Use low-sodium broth to control saltiness. Can add carrots or celery for extra vegetables. Thaw steak before cooking for best results.
