A quick and easy homemade soft cinnamon sugar donut bread that is fluffy, tender, and lightly sweetened, perfect for breakfast or a snack with a delightful cinnamon sugar crust.

  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar (150g)
  • 2 teaspoons ground cinnamon
  • 1/3 cup unsalted butter, melted (75g)
  • 3/4 cup buttermilk, room temperature (180ml) (can substitute with milk + 1 tbsp vinegar)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • Additional melted butter for brushing
  • Cinnamon sugar mixture: 1/2 cup sugar + 1 tablespoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×5-inch loaf pan well.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, granulated sugar, and ground cinnamon until well combined.
  3. In a separate bowl, whisk the melted unsalted butter, buttermilk, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold using a spatula until just combined. Do not overmix; a few lumps are fine.
  5. Pour the batter evenly into the prepared loaf pan without pressing down.
  6. Bake for 25–30 minutes, testing doneness by inserting a toothpick in the center; it should come out clean or with a few crumbs.
  7. While the bread bakes, mix 1/2 cup sugar with 1 tablespoon cinnamon in a shallow dish for the coating.
  8. When the bread comes out of the oven, immediately brush the top with melted butter, then sprinkle generously with the cinnamon sugar mixture.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack. Serve warm or at room temperature.

Notes

Use room temperature eggs and buttermilk for best mixing and rising. Do not overmix the batter to keep the bread tender. Brush the bread with melted butter immediately after baking to help the cinnamon sugar stick and form a crispy crust. Check the bread early if your oven runs hot to avoid overbaking. For dairy-free or vegan versions, substitute buttermilk with almond or oat milk plus lemon juice, use vegan butter or coconut oil, and replace eggs with flax eggs.
