  • 1.5 to 2 pounds thin, tenderized cube steak
  • 1 packet (about 1 oz) onion soup mix
  • 1 cup beef broth (low-sodium preferred)
  • 3 tablespoons all-purpose flour (or almond flour/cornstarch for gluten-free)
  • 2 tablespoons butter
  • Optional: fresh black pepper to taste
  • Optional: ½ teaspoon garlic powder

Instructions

  1. Pat the cube steak dry with paper towels and lay flat on a cutting board.
  2. In a mixing bowl, combine flour, onion soup mix, garlic powder (if using), and a pinch of black pepper. Toss the cube steaks gently to coat evenly.
  3. Place the coated cube steaks in a single layer in the bottom of the crockpot.
  4. Pour 1 cup beef broth over the steaks, spreading it so steaks are partially submerged.
  5. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours until meat is tender.
  6. Carefully remove steaks and set aside covered. Stir butter into crockpot juices to enrich and thicken gravy.
  7. If thicker gravy is desired, mix 1 tablespoon flour with 2 tablespoons cold water and stir into crockpot; cook on HIGH for 10-15 minutes.
  8. Serve steaks with gravy spooned over, paired with mashed potatoes or buttered noodles.

Notes

Do not lift the lid during cooking to prevent drying out the meat. For thicker gravy, cook uncovered for 20 minutes longer or add a flour slurry. Optional browning of cube steak before slow cooking adds flavor but is not necessary. Use gluten-free flour or cornstarch for gluten-free version. Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
