A quick and easy shredded beef roast made in the Instant Pot, delivering tender, juicy, and flavorful beef perfect for tacos, sandwiches, or over mashed potatoes.

  • 34 lbs beef chuck roast
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 ½ cups beef broth (low-sodium preferred)
  • 2 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 1 tbsp brown sugar
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Optional: red pepper flakes
  • Optional: splash of balsamic vinegar

Instructions

  1. Pat the beef chuck roast dry with paper towels. Dice the onion and mince the garlic.
  2. Turn the Instant Pot to sauté mode and heat olive oil. Add diced onions and cook until softened, about 3-4 minutes. Add garlic and cook for another minute. Remove onions and garlic to a bowl.
  3. Season the roast generously with salt and pepper, then sear it in the hot oil, about 4-5 minutes per side, until a deep golden crust forms.
  4. Pour in beef broth and Worcestershire sauce to deglaze the pot, scraping up browned bits with a wooden spoon. Stir in tomato paste, brown sugar, cumin, smoked paprika, oregano, and optional red pepper flakes. Return onions and garlic to the pot.
  5. Place the seared roast back into the pot, nestling it into the liquid. Seal the lid, set to high pressure for 60 minutes. Once done, allow a natural pressure release for 10-15 minutes before quick-releasing any remaining pressure.
  6. Carefully remove the roast and shred it using two forks right in the pot or on a cutting board. Mix the shredded beef with the cooking juices for extra moisture and flavor. Taste and adjust seasoning with salt and pepper as needed.

Notes

Do not skip browning the beef for best flavor. Use natural pressure release to keep meat tender. Trim excess fat before cooking. Deglaze pot thoroughly to avoid burn warnings. Shred beef while warm for easier shredding and better flavor absorption. Adjust liquid if more sauce is desired.
