  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • Salt and freshly ground black pepper, to taste
  • 3 large carrots, cut into chunks
  • 4 medium potatoes, quartered

Instructions

  1. Pat the beef chuck roast dry with paper towels and season generously with salt and pepper.
  2. Peel and slice the onion, mince the garlic, and chop the carrots and potatoes into chunky pieces.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering. Sear the roast for 4-5 minutes on each side until a deep golden crust forms.
  4. Transfer the seared roast to the slow cooker.
  5. In the same skillet, sauté the sliced onions and garlic for about 2 minutes until fragrant and translucent. Pour over the roast in the slow cooker.
  6. Scatter the carrots and potatoes around the roast in the slow cooker.
  7. Pour in the beef broth and Worcestershire sauce. Sprinkle dried thyme and rosemary evenly over the top.
  8. Cover and cook on LOW for 8 hours or on HIGH for 4-5 hours until the meat is fork-tender.
  9. Taste the cooking juices and adjust salt and pepper if needed.
  10. Use two forks to shred or slice the meat and serve hot over mashed potatoes or alongside a green salad.

Notes

Searing the meat before slow cooking adds a rich crust and depth of flavor. Avoid opening the slow cooker lid during cooking to maintain heat. Let the meat rest for 10 minutes before shredding to redistribute juices. Adjust cooking time if using different cuts or sizes of meat.
