A warm, comforting chicken noodle soup made with tender poached chicken, fresh herbs, and perfectly cooked egg noodles. This easy homemade recipe is perfect for chilly evenings and busy weeknights.

  • 2 large boneless, skinless chicken breasts or thighs
  • 8 cups low-sodium chicken broth
  • 3 medium carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 6 ounces wide egg noodles
  • 2 tablespoons olive oil or butter
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 tablespoon lemon juice (optional)
  • Salt and black pepper to taste

Instructions

  1. Dice the onion, slice carrots, chop celery, mince garlic, and chop fresh parsley and thyme. Set aside.
  2. In a large stockpot, bring the chicken broth to a gentle simmer over medium heat. Add chicken breasts or thighs whole and cook for 15-20 minutes until fully cooked (internal temperature 165°F).
  3. Remove chicken from broth and shred into bite-sized pieces with two forks. Keep broth on low heat.
  4. In a separate pan, heat olive oil or butter over medium heat. Add onion, carrots, and celery and cook for 5-7 minutes until softened. Add minced garlic and thyme leaves in the last minute, stirring constantly.
  5. Add sautéed vegetables to the simmering broth and cook gently for 10 minutes to meld flavors.
  6. Stir in egg noodles and shredded chicken. Simmer for 6-8 minutes until noodles are tender but not mushy.
  7. Stir in fresh parsley, lemon juice, salt, and pepper to taste. Turn off heat.
  8. Ladle soup into bowls and serve warm.

Notes

To thicken broth, add a cornstarch slurry (1 tbsp cornstarch mixed with 1 tbsp water) during the last few minutes of simmering. Avoid overcooking noodles to prevent mushiness. Adding lemon juice at the end brightens the flavor. Soup tastes better the next day after flavors meld. Store leftovers in an airtight container in the fridge up to 3 days. Freeze broth and shredded chicken separately; avoid freezing cooked noodles.
