A hearty and easy-to-make cheeseburger pie with a flaky crust, juicy ground beef, and melted cheddar cheese, perfect for family dinners and potlucks.

  • 2 cups all-purpose flour (240 g)
  • 1 cup unsalted butter, cold and cubed (225 g)
  • 46 tbsp ice water (6090 ml)
  • 1 tsp salt
  • 1 lb ground beef, 80/20 lean to fat ratio (450 g)
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups shredded cheddar cheese (200 g)
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • Salt and freshly ground black pepper to taste
  • 1 tbsp olive oil or vegetable oil
  • 1 large egg (for brushing the crust)
  • Optional toppings: dill pickles thinly sliced, cooked bacon bits, chopped tomatoes or sautéed mushrooms

Instructions

  1. Make the Pie Crust: Combine flour and salt in a large bowl. Add cold, cubed butter and cut into flour until mixture resembles coarse crumbs with pea-sized bits.
  2. Slowly add ice water, stirring until dough just holds together. Shape into a disk, wrap in plastic, and chill for at least 30 minutes.
  3. Prepare the Filling: Heat oil in a large skillet over medium heat. Cook chopped onion until translucent, about 4-5 minutes.
  4. Add minced garlic and cook for another minute until fragrant.
  5. Add ground beef, breaking it apart, and cook until browned and no longer pink, about 7-8 minutes. Drain excess fat if needed.
  6. Stir in tomato paste, Worcestershire sauce, Dijon mustard, salt, and pepper. Cook for 2 more minutes. Remove from heat and let cool slightly.
  7. Assemble the Pie: Preheat oven to 375°F (190°C). Roll out two-thirds of dough into a 12-inch circle and place in pie dish.
  8. Sprinkle 1 cup shredded cheddar over crust bottom. Add cooled beef mixture evenly, then sprinkle remaining cheese on top. Add optional toppings if desired.
  9. Roll out remaining dough into a 10-inch circle and place over filling. Trim excess dough and pinch edges to seal. Cut slits on top to vent steam.
  10. Beat egg and brush over crust for a golden finish.
  11. Bake for 35-40 minutes until crust is golden brown and filling is bubbly.
  12. Let pie rest for at least 10 minutes before slicing.

Chill dough for at least 30 minutes to ensure a flaky crust. Drain excess fat from beef to avoid greasiness. Cover pie edges with foil if browning too fast. Let pie rest before slicing for best texture. Reheat leftovers in oven to maintain crust crispness. Can freeze before baking for make-ahead convenience.
