  • 1 pound (450g) ground beef (80/20 blend)
  • 6 ounces (170g) sharp cheddar cheese, shredded or sliced
  • 4 large soft sandwich rolls or 8 slices sturdy bread (sourdough or crusty white loaf recommended)
  • 2 tablespoons butter, softened
  • 1 small yellow onion, finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste
  • Dijon mustard (optional)
  • Pickles or caramelized onions (optional)

Instructions

  1. Shred or slice the sharp cheddar cheese. Finely chop the yellow onion. Prepare pickles or caramelized onions if using. Slice sandwich rolls or bread if needed.
  2. Heat a large skillet over medium heat. Add ground beef and chopped onion. Break beef apart with a spatula and cook for 7-8 minutes until beef is browned and onions softened.
  3. Season the beef with garlic powder, smoked paprika, salt, pepper, and Worcestershire sauce. Stir and cook for another 2 minutes to meld flavors. Adjust seasoning as needed.
  4. Spread softened butter on one side of each bread slice or roll halves.
  5. On the unbuttered side, layer cooked beef evenly. Top with shredded cheddar cheese (about 1.5 ounces per sandwich). Add Dijon mustard or pickles if desired.
  6. Heat a clean skillet or griddle over medium-low heat. Place sandwiches buttered side down. Press gently and cook 3-4 minutes until bread is golden and crispy. Flip and cook another 3-4 minutes until cheese melts and bread toasts. Lower heat if bread browns too fast.
  7. Serve immediately, cut in half if desired.

Notes

Use medium-low heat to melt cheese slowly without burning bread. Cover pan briefly if bread browns too quickly to help cheese melt evenly. Soften butter before spreading for even toasting. Cooking beef ahead saves time. Variations include adding jalapeños, swapping cheeses, or making vegetarian with plant-based meat and vegan cheese.
