  • ½ cup tahini (about 120 ml)
  • ¼ cup fresh lemon juice (60 ml)
  • 12 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil (30 ml)
  • ¼ to cup water (6080 ml)
  • 1 teaspoon maple syrup or honey
  • ½ teaspoon salt
  • Pinch or two ground black pepper

Instructions

  1. Juice about 2 medium lemons to get ¼ cup (60 ml) of fresh juice. Mince 1-2 garlic cloves finely. Set aside.
  2. In a mixing bowl, whisk together ½ cup (120 ml) of tahini and the fresh lemon juice. Whisk for 1-2 minutes until smooth and creamy.
  3. Stir in the minced garlic, 2 tablespoons (30 ml) of extra virgin olive oil, and 1 teaspoon of maple syrup or honey. Whisk well to combine.
  4. Gradually add ¼ cup (60 ml) of water, whisking constantly. Add more water in small increments (up to ⅓ cup or 80 ml) until desired consistency is reached.
  5. Add ½ teaspoon salt and a pinch or two of black pepper. Whisk and taste. Adjust lemon, salt, or sweetness as needed.

Notes

If dressing is too thick or bitter, add more maple syrup and water to adjust. Let dressing sit for 10 minutes before serving to meld flavors. Store in airtight container in fridge up to 5 days; stir or thin with water before use. Fresh lemon juice is preferred over bottled. Roasted garlic can be used for milder flavor. Variations include adding cayenne, fresh herbs, or swapping lemon for lime with ginger for an Asian twist.
