Instructions

  1. Prepare the crust (10 minutes): In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until evenly moistened. Press firmly into the bottom of a 9-inch springform pan or pie dish, making sure it’s compact and even. Chill in the fridge while making the filling.
  2. Soften the cream cheese about 30 minutes before starting or microwave in 10-second bursts until just softened but not melted.
  3. Make the filling (15 minutes): Using an electric mixer, beat the softened cream cheese until creamy and smooth, about 2-3 minutes. Gradually add powdered sugar and vanilla extract, mixing until well combined and velvety.
  4. Whip the heavy cream in a separate chilled bowl to soft peaks.
  5. Gently fold the whipped cream into the cream cheese mixture in batches using a spatula, avoiding overmixing to keep it fluffy.
  6. Pour the filling over the crust and smooth the top. Cover loosely with plastic wrap.
  7. Chill for at least 4 hours, preferably overnight, to allow the cheesecake to firm up and flavors to meld.
